Substances and products that might cause allergies and intolerances according to the Reg. CE n. 1169/2011 annex II:

 

  1. Cereals containing gluten, namely: wheat, rye, barley, oats, spelt, kamut or their hybridised strains, and products thereof, except:

  2. Crustaceans and products thereof;

  3. Eggs and products thereof;

  4. Fish and products thereof;

  5. Peanuts and products thereof;

  6. Soybeans and products thereof;

  7. Milk and products thereof, including lactose;

  8. Nuts, namely: almonds, hazelnuts, walnuts, cashews, pecan nuts, Brazil nuts, pistachio nuts, macadamia or Queensland nuts, and products thereof;

  9. Celery and products thereof;

  10. Mustard and products thereof;

  11. Sesame seeds and products thereof;

  12. Sulphur dioxide and sulphites at concentrations of more than 10 mg/kg or 10 mg/litre in terms of the total SO2;

  13. Lupin and products thereof;

  14. Molluscs and products thereof.

 

The fish we use in the raw seafood dishes is immediately processed and, before being served, it undergoes freezing treatment with the specific blast freezer, lowering the temperature to -22° for at least 24 hours, according to Reg. CE 853/2004 annex III, section VIII, chapter 3, letter d.
